It started with a single shift.
Luis landed a barista gig at a hotel in Barcelona. We knew nothing about specialty coffee — nothing. So we did what obsessives do: tasted everything, read relentlessly, and visited every café we could find. One cup of light-roast Colombian that tasted like peaches changed it all. No bitterness. No sugar needed. We haven't looked back since.
